Updated: May 19, 2022

If you love sweet potatoes, this one can be your favorite menu. Our family loves this sweet potato pancake. I often bake this menu for them. Even though one of my daughters doesn’t like to eat sweet potatoes but she loves this sweet potato pancake.

Here I am adding banana topping and a little bit of sugar-free chocolate syrup. If you love sweet potatoes, this recipe can be one of our favorite menus. My husband and the

children love this sweet potato pancake. I make this menu quite often. One of my children doesn’t like to eat sweet potatoes but she loves sweet potato pancakes. Sweet potato gives the pancake a nice sweet flavor without having to add refined sugars.

The best part about sweet potato pancakes is that you can add even more nutrients and fiber to your breakfast by topping it with fresh fruit. I am using fresh banana topping dan sugar-free chocolate syrup.

How to Mashed Sweet Potatoes

  1. Wrap sweet potatoes in foil (after rinse, scrub, and poke holes with a large fork). Cut pieces of aluminum foil that are large enough to wrap each potato at least twice.

  2. Next, roll each sweet potato in aluminum foil. Fold over the ends of the foil to completely seal the potato. Place the wrapped sweet potatoes on a large baking sheet.

  3. Bake sweet potatoes in a 400F/200C oven for 60 minutes until tender.

  4. Split each sweet potato lengthwise and let it cool until it's easy to handle, then scoop out, place in a large bowl.
